Granola

6 cups regular rolled oats
4 cups rolled grain(I use one pkg. Bob's Red Mill 5 Grain Rolled Cereal available at Macey's)
2 cups unsweetened coconut (Shangri-La has this)
1 1/2 cups raw wheat germ (I leave this out sometimes)
1 cup chopped almonds
1 cup chopped other nuts or seeds like pecans, sunflower, etc.
1 cup raw or brown sugar
1/2 milled flaxseeds (I leave this out if I don't have any)

Mix all together then pour on:
1/2 cup honey
1 cup water
2 teaspoons sea salt
1 cup coconut oil (other oil works if you don't have this, but it's particularly yummy with coconut oil)
3 teaspoons vanilla

Mix well. Spread on two cookie sheets. Roast in oven t 300 degrees for one hour, stirring and alternating pans every 20 minutes or so.

After it has cooled, stir in your fruit. Raisins, chopped dates, apple flakes, or other dried fruit. For not so healthy, mini chocolate chips or M&M's are a real favorite!

Cinnamon Syrup

This is a delicious syprup recipe that I thought might go great with Kristy's cinnamon waffles!
They were delicious! Thanks Kristy!

Cinnamon Syrup
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1 teaspoon cinnamon
1/2 cup cream (0r evaporated milk)
In a small suacepan, stir together the sugar, corn syrup, water, and cinnamon. Stirring constantly, bring to a boil over moderate heat and boil for two minutes. Cool for about five minutes and stir in the cream. Syrup will thicken as it cools. This syrup keeps well in the refrigerator, tightly covered, for weeks. To reheat, warm slowly or it will overcook and get stringy.

Gingerbread Waffles

*These are perfect for Christmas morning, but I like to make them all year round. They are heavenly!

½ cup oil
½ cup brown sugar
½ cup molasses
2 eggs
1 cup milk or buttermilk
2 cups flour
1 teaspoon baking powder
1 ½ teaspoons cinnamon
1 teaspoon ginger
½ teaspoon salt

Mix all ingredients together until almost smooth. Pour onto a hot waffle iron sprayed with non-stick spray. Serve with whipped cream or maple syrup.

Whole Wheat Pancakes

Don't think you can turn your husband into a whole wheat eater? If it worked on my husband, it will definitely work on yours. My kids love these, too!

1 cup fresh ground whole wheat flour (I've never tried storebought flour so the promise above doesn't apply)
2 tsp. baking powder
1/2 tsp. salt
1 T. sugar
1 egg
1 cup buttermilk (I've also used regular milk, canned milk or water. It changes the taste slightly but is still yummy)
1 T. oil

Fry 'em up on the griddle. If you have frozen blueberries or huckleberries, sprinkle some in while cooking for an added treat!

Breakfast Casserole

This is so yummy and filling that we will sometimes have this for dinner at our house.

1 package frozen hashbrowns
1 cup chopped ham
1/2 cup butter
1 cup milk
5 eggs
2 cups cheese
optional: 1/4 cup chopped onion

Cut butter into small pieces. Mix with hashbrowns in 9x13 pan. Bake at 375 for 20 minutes. Stir it up, then layer ham, and cheese. Beat eggs with milk and pour on top. Bake another 40 minutes at 375.

Pumpkin Pancakes

Mix together
1 cup flour
1/4 cup brown sugar packed
1 1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
(It also called for ginger but I didn't have any so I didn't write it down oops! I don't think it needed any.)

Mix together
1 large egg slightly beaten
1 tbsp oil
1 cup milk
1/3 cup pumpkin

Add the wet ingredients to the dry, mix and then let stand for 5 minutes before cooking.

If you love pumpkin, you will love these! Yummy!!
